Egypt Valley Chef Dawn Boertman shares her go-to recipe for Pumpkin Bars sure to satisfy any craving. Her favorite thing about these delectable treats? You can cut them into any size you want, big or small!
Bake temp: 325ºF
Bake time: 15-25 minutes
Yield: 9x9 pan
INGREDIENTS:
- 15oz pumpkin puree
- 2 eggs
- 2 cups flour
- 1 cups sugar
- ¼ tsp ginger
- 1/8 tsp cloves
- 1 tsp cinnamon
- 1 tsp vanilla
- ½ tsp salt
- 1 tsp baking powder
- ½ tsp baking soda
INSTRUCTIONS:
- In a bowl, combine all wet ingredients (pumpkin, eggs, sugar, vanilla).
- In a separate bowl, combine all dry ingredients (flour, ginger, cloves, cinnamon, salt, baking powder, baking soda).
- Combine dry and wet ingredients, being careful not to over-mix.
- Pour into prepared pan and bake for 15-25 minutes.
- Allow to cool in pan.
- Once cooled, place on desired serving tray and ice with the Cream Cheese Frosting.

CREAM CHEESE FROSTING
INGREDIENTS:
- 4oz cream cheese
- 3 tbsp soft butter
- 1 tsp milk
- 1 tsp vanilla
- 1 cup powdered sugar
INSTRUCTIONS:
- Cream together butter and sugars.
- Add rest of ingredients and whip until combined.
